Peach Cake with Whipped Cream Frosting

I love peaches and if I can add them to a recipe to add some more flavor then I do. Although, plain yellow cake mix tastes great the way it is, adding a can of peaches to it gives it a whole lot more flavor. You can use regular frosting is you wish, but I think the coolness of whipped cream works best for these cupcakes.

Ingredients:
1 yellow cake mix (do not add water, replace with peach juice from can)
eggs, butter and oil as indicated on box of cake mix
1 15 or 16 oz. can of peaches
1 can of spray whipped cream

Directions:
Drain peach juice and set aside. Chop peaches into tiny pieces. Make cake mix as indicated on box, but do not add water and replace with peach juice. Preheat oven according to the box. You should be able to make 12 cupcakes from the mixture. Place cupcake cups into pan and add in equal amounts of batter into each. Bake as indicated on box, remove and cool. Instead of frosting on these cakes, I like to use whipped cream as whipped cream and peaches is so delicious. Once you give each cupcake a swirl of cream, place in the refrigerator for 1 hour or in freezer for 20 minutes, just to stiffen up the cream and serve!
