When
the hot weather comes we all want something to cool and refreshing to
eat. I am a big rice fan. I know other people make cold rice salads,
but I never have and came up with this one to share with you.
Ingredients:
1 cup of wild rice
1 cup of white rice
2 cups of corn kernels (frozen or canned)
1 cup of red onions, diced
6 green onions, chopped
4 cups of chicken broth
1 pint of cherry or grape tomatoes, sliced in half
1/4 cup of olive oil
2 tbsp. of rice vinegar
2 tbs. of dark sesame oil
1 tsp. of sugar
1/2 cup of walnuts, minced (your choice of nuts)
Directions:
Add chicken broth in a medium sized saucepan. Add the rice and wild rice, bring to a boil, reduce heat to low, cover. Let cook for 40 minutes. Remove from heat. Cool completely.

Whisk together the olive oil, rice vinegar, sugar, and sesame oil. In
a large bowl gently mix together the cooled cooked rice, green and red
onions, peas, corn, tomatoes, walnuts, and dressing. Add salt and
pepper to taste, if needed.
