2 Cups olive oil (an
1 Cup fresh lemon juice
6 garlic cloves
2 Teaspoons salt
2 Tablespoons dried oregano
8 Chicken breasts, skin on
4 baking potatoes quartered
Directions:
At least 2 hours before you plan to bake this dish, combine the olive oil, lemon juice, garlic, salt and oregano. Place in bowl or bag, making sure all pieces are coated with marinade.
When ready to bake, place all pieces in shallow baking dish with potatoes. Season with a bit of salt and pepper. Bake at 350 degrees for 1 hour. Serve with a salad.
