My
daughter, Samantha loves sweet potatoes and I love anything with a
topping, cheese or dip. As you know my family is from Spain and chorizo
was something we ate all the time. So I decided to incorporate the two.
Give them try.
Ingredients:
2 large sweet potatoes
1 cup of shredded cheddar cheese
1 small onion or 1/2 cup of diced onions
1 chorizo link, about 4 inches.
tsp. salt
tsp. pepper
1 tbsp. olive oil
Directions:
First
bake the sweet potatoes for 40 minutes on 375 degrees or until fork
tender. In a medium fry pan add the olive oil, onions, chorizo, and
green onions. Cook then until the chorizo begins to get a bit crispy.
Slice the sweet potatoes open and scoop potatoes into bowl. Add in
chorizo mixture, cheese and blend well. Spoon into potatoe skins, give a
sprinkle with salt and pepper and bake for 20 minutes. Serve with sour
cream or ranch dressing.
