Seafood Stew

I love a good stew or soup and if you are a seafood lover this is a quick and easy way to have a nice warm seafood dinner for 2. You also can add in other vegetables that you like, peas, potatoes, carrots, etc. Anything is great in a stew.

Ingredients:
1 medium onion, finely chopped
1 clove of garlic, finely chopped
2 tsp. olive oil
½ tsp. dried thyme
¼ tsp. salt
¼ tsp. pepper
4 saffron threads
1 15 or 16 oz. can of diced tomatoes or 1 cup freshly chopped
½ lb. cleaned shrimp
½ lb. cleaned scallops
1 cup green beans
¼ cup clam juice

Directions:
Heat oil in large sauce pan over medium heat. Add in onion and sauté until translucent, about 3 minutes. Then add in garlic, salt, pepper and saffron (shred between 2 fingers).
Stir in tomatoes, broth and beans. Bring to a simmer and cover for about 10 minutes and simmer.
Add in scallops first and cook for about 2 minutes, add in shrimp and cook for another 2 minutes or until shrimp is pink. Serve!
